Massaged Kale Sesame Salad

It feels like an eternity since I posted a recipe! Since I’ve been lalalaloving prepping food for a week at time, photogenic food that is served on a plate (gasp) has been a rarity.  But, alas I finally took the time to measure out ingredients, plate my food, and drag my camera out to capture the occasion.  It was momentous.

In all reality, this recipe was motivated by the fact that I need to use up some kale that was about to go south and although I have heard great things about massaged kale, I had never prepared it that way myself.  So  I figured there was no time like the present.  I had also picked up a pineapple the other day at the grocery store and decided my kale salad was going to have to include that ingredient or else I would need to justify eating an entire pineapple by itself in one day.  So I decided to massage the heck out my kale, taking it from gritty and tough to smooth and palatable. And quite honestly, I am a fan!

Of course I made this salad and proceeded to put it in a tupperware to eat for the lunch the next day, but it looked nice when it was in a bowl!

Massaged Kale Sesame Salad

Ingredients

3 cups washed and destemmed kale, chopped

1 tablespoon sesame oil

1 tablespoon soyaki sauce

1 carrot, sliced

1/2 cup pineapple, chopped

1 tablespoon roasted sesame seeds

Directions

Measure out your kale and place in a bowl.  Drizzle the sesame oil and soyaki sauce over kale.  With your hands, gently toss the kale and begin to massage the kale. Yep you heard me, massage those little green leaves for 2-5 minutes, or until the kale reaches your desired consistency.  Toss with a carrot, pineapple, and sesame seeds.
